Delicious Regenerative Beef Curry
Today’s recipe is one I've been honing for years and it’s finally getting somewhere close to what I have in my minds-eye. Packed full of flavour this curry was sooooo good. Til requested spinach to be added as she felt like more veggies but I'd probably leave out just to be more traditional I guess.
Here’s how rolled:
Delicious Regenerative Beef Curry
Serves 4+
Ingredients
1.2 kg diced chuck beef (www.thegoodfarm.shop)
2 tbs Coconut oil
1 tsp cumin
2 brown Onion
1/4 tsp cardamom powder
6 curry leaves
1 long red chill - sliced
1 tsp chill powder
1/4 tsp chilli flakes
1/2 tsp mustard powder
1 tsp curry powder
1 tsp coriander
4 garlic cloves - crushed
1 cms fresh ginger - grated
6 tomatoes - cored and roughly chopped
2 red capsicum - deseeded and roughly chopped
2 cups Spinach - optional
Method
- pre heat oven to 140C
- In a oven proof dish or crock pot heat the coconut oil on a medium heat on the stove top
- Add the onion, garlic and ginger and sauté for 5 minutes before adding all the spices, curry leaves and chilli - stirring occasionally for 10 minutes
- Next add the tomatoes and capsicum and stir, continue to cook for further 10 minutes.
- Season before popping the lid on and placing in the oven. Cook for 2.5hrs or until meat is tender
- Remove from the oven and fold in the spinach (optional)
- Otherwise place on a low temp on the stove and reduce the curry to a desired consistency
- Remove from the heat and serve.
