Beef Noodle Soup (serves 4)
A fragrant, nourishing soup that's surprisingly simple to make using The Good Stock Beef Broth...

Ingredients
- 1 litre The Good Stock Beef Broth
- 1 onion, halved
- 4 garlic cloves
- 4 whole cloves
- 1 cinnamon stick
- 2 tbsp tamari sauce (or soy if you're not intolerant to gluten)
- 250g rice noodles
- 300g beef steak, thinly sliced
- 1 tbsp olive oil
- Bean sprouts
- Thinly sliced onion
To serve (optional)
- Fresh coriander
- Sliced chilli
- Lemon wedges
Method
1. Make the broth
Add The Good Stock Beef Broth, onion, garlic, cloves, cinnamon stick and tamari sauce to a large saucepan. Bring to a gentle simmer and cook for 1 hour.
2. Strain the broth
Remove the onion, garlic, cloves and cinnamon stick using a sieve. Keep the broth warm.
3. Cook the noodles
Prepare the rice noodles according to the packet instructions. Drain and divide between four bowls.
4. Cook the beef
Heat the olive oil in a frying pan over high heat. Sear the beef until just browned.
5. Assemble
Top the noodles with the cooked beef, bean sprouts and sliced onion. Ladle the hot broth over the top.
Finish with coriander, chilis, and a squeeze of lemon.
